The reason why the marshmallow is added towards the end is so that it allows the marshmallow to retain its fluffy texture and shape. - Graham crackers - Make sure to break the pieces enough so it folds in smoothly in the cookie dough batter, but should not be in powder form.
- Marshmallows - I always find most S'mores cookie recipes on the Internet tell you to bake the marshmallows with the cookie dough, but my recipe calls for it 2-3 minutes before fully baked. This ensures a nice, gooey pull with each marshmallow cookie!

- Freezing cookie dough - Shape into individual cookie dough balls and place them on a lined baking sheet. Once frozen, transfer the dough balls to a freezer-safe bag. When ready to bake, simply place the frozen dough balls onto a baking sheet and add a few extra minutes to the baking time.

Ingredients
- 300 g all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- 180 g unsalted butter, room temperature
- 180 g dark brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 150 g chocolate chips
- 120 g graham crackers
- 12 marshmallows
- 12 Oreos
Instructions
- In a medium bowl, sift together the all purpose flour, baking powder and salt.
- In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the butter and brown sugar until light and fluffy (medium speed for 3-4 minutes).
- Add the eggs and vanilla extract and mix until just combined. Do not overmix!
- Fold in the dry mixture to the butter mixture. Right before the dry ingredients are fully mixed in, add in the chocolate and broken graham crackers.
- Divide the cookie dough into 12 equal balls. Wrap and refrigerate for at least 2 hours before baking. Preheat the oven to 350°F (180°C) when you are ready to bake.
- Bake the cookies for 15 minutes and take out of the oven. Decrease the oven temperature to 250°F (120°C).
- Immediately place one marshmallow on top of each cookie. Make sure to squish down on each cookie so the marshmallow is in place.
