Ultimate Vegan Double Chocolate Date and Oreo Brownies

  • 1/2 cup fresh medjool dates
  • 1 ripe banana
  • 1 cup almond milk
  • pinch of pink salt
  • 1/3 cup coconut oil (melted)
  • 2 cups organic unbleached cake flour
  • 1 1/2 tsp baking powder
  • 5 1/2 tbsp cocoa powder
  • 2 tbsp organic brown sugar
  • 10-12 Oreo cookies (crushed)
  • handful dairy-free dark chocolate (chopped)

Instructions

  1. Preheat oven to 350 degrees F. Line a square baking pan with parchment paper.
  2. Chop the dates and place in a blender with the almond milk, banana and a pinch of salt. Blend until smooth. Move to a bowl and stir in the coconut oil.
  3. Mix together the flour, sugar, baking powder and cocoa powder. Fold the liquid ingredients into the dry ingredients. The mixture should be quite thick, if it seems still a bit too thick, add some almond milk.
  4. Spread half of the batter into the prepared baking pan and top with crushed Oreos and chocolate chunks. Spread last half and add more Oreos and chocolate if desired. Bake for 25 minutes or until a toothpick inserted comes out clean. Cool completely before cutting.

Notes

Double this recipe if you want brownies with more height. Make sure to layer with Oreos and more chocolate.
